She explains that lectin a protein that binds to certain carbohydrates that are not good for people with autoimmune disorders like thyroid disease. The heat helps to destroy the lectins, so in some cases cooking or roasting the food helps. Dr. Janine looks at how quinoa, raw peanuts and cashews, corn, soy (especially GMO), and nightshade veggies are all high in lectins.
